Thick Lentil Soup

Warms the soul!

In a deep pot, fry on medium:

4 slices bacon, diced

until browned.


2 medium onions, sliced

2 medium carrots, sliced

3 stalks celery, sliced

and cook until tender


1 16oz bag of lentils

½t pepper

½t thyme leaves

2 bay leaves

6c hot water

cover and simmer over low heat 1 hour

or until lentils are tender and soup is reduced to desired thickness.

Add salt and pepper to taste.

My favorite way to eat this is reheated (even more condensed) with ketchup.
